What Is Porcini Mushroom Powder?

Porcini mushroom powder is made from dried porcini (Boletus edulis), also called cep, penny bun or king bolete, one of the most prized wild mushrooms in the world. Porcini grow in forests across Europe, Asia and North America, living in partnership with the roots of trees such as spruce, pine, oak and beech.

Porcini cannot be cultivated, so every porcini is a wild mushroom, foraged in season. The mushrooms are cleaned, sliced, dried and finely ground. Drying concentrates their flavor, and the powder has a deep, nutty, earthy and savory aroma.

Porcini powder is one of the easiest ways to add umami to everyday cooking. Stir it into risotto, pasta sauces, soups, stews, gravies and pan sauces, mix it into butter, or blend it with salt and pepper as a rub for steak, roast beef or chicken. A spoonful also deepens vegetarian dishes such as lentil soup or mushroom ragout.

Because the powder dissolves into liquid, there is no need to soak and chop dried slices: just add it directly to the pan.

Our porcini mushroom powder contains only ground dried porcini with nothing added. It is sold by weight, from small packs to bulk.

How to Use Porcini Mushroom Powder

  • Risotto and pasta: Stir 1 to 2 teaspoons (about 3 to 6 g) into risotto or pasta sauce while it cooks.
  • Soups and gravies: Whisk 1 teaspoon into soups, stews or gravy for extra depth.
  • Steak rub: Mix 1 tablespoon of powder with salt, black pepper and a little sugar and rub onto meat before cooking.
  • Porcini butter: Mash 1 teaspoon into 4 tablespoons of soft butter with a pinch of salt.

Safety

Avoid if you are allergic to mushrooms. Cook before eating. Keep out of reach of children.
